Preheat oven to 425°F (220°C). Cut each pizza crust in half; place on parchment paper-lined baking sheet. Brush tops with olive oil, sprinkle with oregano. On 4 crusts: spread with the marinara sauce, top with pepperoni, pancetta, mini mini bocconcini and sprinkle with parmesan cheese.
Bake all 8 crusts about 10 min., until cheese melts and turns golden.
Remove crusts from oven. Sandwich plain and topped crusts. Cool slightly, slice and serve.
