Caravel lettuce with herb dressing

Yields 2
  • 1 HEAD CARAVEL LETTUCE
  • 1 bunch Mint | finely chopped
  • 1 bunch Basil | finely chopped
  • 100 mL (1⁄2 Cup) Yogurt
  • 50 g (1⁄4 Cup) Ricotta
  • 3 tbsp Olive oil
  • 1 Lemon | juiced
  • 50 g (1⁄4 Cup) Parmesan (optional)
  1. Leaving the lettuce aside, whisk all the other ingredients together with salt and pepper.
  2. Drizzle dressing over the whole lettuce, and scatter generously with Parmesan shavings to your taste.
  3. Roughly cut up into wedges and serve.
