Preheat your grill at medium-high heat. Clean and oil the grates.
Cut down the length of each sausage casing using a sharp knife. Remove sausage meat from casing and shape into a ½ inch (1 cm) thick patty. Discard casing. Repeat with remaining sausages.
Grill patties, lid closed, for 2 to 3 min. per side or until cooked to 74°C (165°F) on an instant read thermometer.
Top each patty with 2 slices mozzarella. Let cheese melt slightly, then transfer burgers to a plate.
Grill prosciutto slices and buns, cut-side-down, until prosciutto is crisp and buns are toasted, about 1 min. Transfer to a plate.
Assemble burgers by placing patties, then tomatoes, crisp prosciutto and lettuce on bottom buns. Spread a heaping tbsp (23 mL) of Avocado Tahini Herb Sauce on each top bun, then cap off burgers.
