Ingredients

- Halibut, if frozen thaw according to package directions
- 12 ounces each
- salt and freshly ground pepper
- 3 tbsp
- Sensations Extra Virgin 100% Olive Oil
- cherry tomatoes (use a mixture of colours or all one colour as desired)
- 10-12 ounces
Method
- Step 1
- Pat halibut steaks dry with a paper towel.
- Step 2
- Season to taste with salt and pepper.
- Step 3
- Heat 2 tablespoons oil in a 12 or 14-inch nonstick frying pan over high heat.
- Step 4
- When pan is hot, add fish and cook until undersides are browned, about 4 minutes.
- Step 5
- Using a spatula, carefully turn fish over and cook until other side is brown and fish is no longer translucent in center (cut to test), about 3 more minutes.
- Step 6
- Gently transfer fish to a serving platter and keep warm.
- Step 7
- To pan add remaining oil and tomatoes.
- Step 8
- Stir or shake over high heat just until tomatoes begin to soften and exude juice, 1-2 minutes.
- Step 9
- Pour tomatoes and pan juices over halibut and serve immediately.
