Ingredients
- 1 cup
- coconut milk
- 1/2 cup
- Compliments Creamy Peanut Butter
- 11/2 tbsp
- Compliments Soya Sauce
- 1/4-1/2 tbsp
- crushed red pepper
- 11/4 pounds
- pork tenderloin
- 1/4 cup
- firmly packed Light Brown Sugar
- 1 tbsp
- minced garlic
Method
- Step 1
- In a small saucepan, combine coconut milk, peanut butter, 1/2 tablespoon soy sauce, and red pepper over medium-high heat.
- Step 2
- Whisk often until smooth and warm, 2 to 3 minutes.
- Step 3
- Remove from heat and keep warm.
- Step 4
- Preheat oven broiler to high.
- Step 5
- Cut pork crosswise into 3 equal portions (each should be 3-4 inches long).
- Step 6
- With a long, sharp knife, cut pieces lengthwise into slices about 1/4-inch thick.
- Step 7
- Lay slices out in a single layer in a nonstick broiler pan.
- Step 8
- In a small bowl, mix together remaining soy sauce, sugar, and garlic.
- Step 9
- Using a small spoon spread half of the sugar mixture in a thin layer over meat slices.
- Step 10
- Broil meat 6 inches from heat until well browned (sugar will brown quickly), 2-3 minutes.
- Step 11
- With tongs, turn meat over.
- Step 12
- Spread with remaining sugar mixture and return to broiler.
- Step 13
- Broil until browned and meat is no longer pink in center (cut to test), about 2 more minutes.
- Step 14
- Transfer meat to a serving platter and spoon peanut sauce into a bowl. Offer sauce to add to meat to taste.
