- 3/4 cup
- plain bread crumbs
- 1/2 cup
- Sensations Corn and Black Bean Salsa
- salt and freshly ground pepper
- 3/4 cup
- shredded Cheddar Jack Cheese
- Lucerne® Sour Cream (optional)
- sliced avocado (optional)
Preheat oven to 425°F.
In a large bowl, combine turkey, eggs, bread crumbs, 1/2 cup salsa, the corn, and salt and pepper to taste.
Mix gently just until blended.
Transfer mixture to a baking pan and shape into a 9” x 5” loaf.
Sprinkle with cheese.
Bake meatloaf until browned and a meat thermometer registers 160°F when inserted into center of loaf, about 30 minutes.
Remove from oven and let stand 5 minutes.
To serve, slice meatloaf and offer additional salsa, sour cream, and avocado slices to add to taste.
