Ingredients

- large head (about 10 ounces) butter lettuce
- 2 to 3
- firm-ripe avocados
- 2 tsp
- lemon juice
- 1 lb.
- flake style imitation crabmeat
- 3 tbsp
- seasoned rice vinegar
- 1/3 cup
- Compliments Soya Sauce
- 1/2 tsp (or to taste)
- prepared wasabi paste
Method
- Step 1
- Combine water and salt in a 3 or 4-quart pan. Bring to a boil over high heat.
- Step 2
- Add rice, cover, reduce heat, and simmer until liquid is absorbed and rice is tender to bite, about 20 minutes.
- Step 3
- Spoon into a serving bowland let cool for a few minutes. While rice cooks, separate lettuce leaves. Rinse leaves and dry between paper towels. Arrange leaves on a serving platter.
- Step 4
- Peel, pit, and cut avocados into small chunks. Sprinkle chunks with lemon juice (to prevent browning). Arrange avocado and crabmeat in separate piles on another serving platter.
- Step 5
- When rice has cooled a few minutes, stir in the rice vinegar and move to a serving bowl. In a small serving bowl, mix together soy sauce and wasabi.
- Step 6
- To serve, spoon rice, avocado, and crab meat into lettuce leaves. Drizzle with soy sauce mixture to taste, wrap, and enjoy.
