In a deep, 12-inch sauté pan or a 5 to 6-quart pan combine onion and olive oil over medium-high heat.
Stir often until onion is softened but not browned, 3-4 minutes.
Add rice and stir often until grains are translucent, 1-2 minutes.
Add about 2 cups of broth and the wine to pan. Bring to a simmer and stir occasionally until liquid is mostly absorbed, about 5 minutes.
Add another 2 cups broth and continue simmering, stirring occasionally, until liquid is absorbed again, about 5 minutes.
Add remaining broth and repeat until broth is mostly absorbed and rice is tender-firm to bite and creamy, 4-6 minutes.
Remove pan from heat and stir in cheese until melted.
Stir in crab meat and chives.
Spoon into serving bowls and serve immediately.
