Method
Step 1
Steam cauliflower florets in the microwave in covered microwave-safe bowl with 1/4 cup (60 mL) water, about 3 min. on HIGH, or until very tender and knife pierces easily. Or using a steamer in pot of salted boiling water, steam about 10 to 12 min. Remove from heat.
Step 2
Roughly crush cauliflower with a potato masher. In a separate bowl, microwave the garlic, milk and olive oil until hot, about 1 min. on HIGH.
Step 3
In food processor, puree the cauliflower with the milk mixture until smooth. Add the feta, sour cream, salt, pepper and nutmeg; blend well. Taste and adjust seasonings, if needed.
Step 4
Garnish with chives and, if desired, additional feta and/or a sprinkle of chili powder to serve.
