Method
Step 1
Preheat your grill at medium-high heat. Clean and oil the grates.
Step 2
Brush mushrooms clean of visible dirt and debris. Combine miso with hot sauce and sesame oil in a large bowl. Rub mushrooms with miso mixture to coat all over. Set aside.
Step 3
Halve cucumbers lengthwise, then thinly slice into half moons. Gently stir cucumbers with carrot, green onions, pickled ginger and juice, sesame seeds, sugar, salt and pepper in a medium bowl. Set aside.
Step 4
Grill mushrooms, turning occasionally, until lightly charred, 8 to 10 mins. Meanwhile, lightly toast buns on the grill, then set aside.
Step 5
Assemble burgers by spreading 2 tbsp (30 mL) guacamole on each bottom bun, then top with grilled mushrooms and slaw. Cap off burgers with top buns.
