- ripe avocado, peeled and pitted

- lime juice

- finely chopped fresh cilantro

- finely chopped fresh parsley

- finely chopped fresh chives

- slices sourdough bread, toasted
- 1/4 cup
- finely crumbled feta cheese

Method
- Step 1
- Poach eggs in saucepan of simmering water with vinegar for about 4 minutes or until whites are firm but yolks are still soft. Lift out eggs using a slotted spoon; drain on paper towel.
- Step 2
- Meanwhile, in bowl, mash together avocado, lime juice, cilantro, parsley, chives and salt. Spread evenly over toasted bread slices.
- Step 3
- Top each one with an egg. Sprinkle with feta cheese.
