- baguette slices, each about ½-in. (1-cm)
- 3 tbsp
- olive oil
- 45 mL
- 1 cup
- finely chopped sweet pickles
- 250 mL
- ¼ cup
- finely chopped sweet onion
- 60 mL
- 2 tbsp
- finely chopped fresh parsley
- 30 mL
- 2 tbsp
- mustard seeds
- 30 mL
- 2 tbsp
- apple cider vinegar
- 30 mL
- 4 tsp
- Sensations by Compliments Prepared Dijon Mustard

- thin slices Montreal smoked meat or corned beef, cut in half
Method
- Step 1
- Preheat broiler to high. Brush baguette slices with olive oil. Place on large baking sheet. Broil 1 to 2 min. per side or until toasted. Set aside.
- Step 2
- To make a relish, in bowl, stir pickles with onion, parsley, mustard seeds and vinegar. Let stand 15 min. for flavours to marinate.
- Step 3
- Spread mustard on each baguette slice. Top with slice of meat. Garnish with ½ tsp (2 mL) of pickle mixture (there will be some left over for another use.)
