Method
- Step 1
- Heat olive oil in a medium saucepan over medium heat.
- Step 2
- Add red onion, garlic and ginger and sauté until onions begin to soften, about 2 minutes.
- Step 3
- Add long grain and wild rice and stir for 1 minute.
- Step 4
- Add peppers and chicken stock and bring to a boil. Cover and simmer until rice is tender and chicken stock has been absorbed fully, about 15 minutes.
- Step 5
- Stir in green onions. Remove from heat and let stand 2 minutes.
- Step 6
- Serve with fresh lime juice squeezed over top.
