Ingredients
- 4 cups
- peeled, cored and diced Gala apples
- 1 L
- 1/2 cup
- sugar
- 125 mL
- 1 tsp
- lemon zest
- 5 mL
- 2 tbsp
- lemon juice
- 30 mL
- 1 1/2 tsp
- grated fresh ginger
- 7 mL
- 1 tsp
- salt
- 5 mL
- pinch cayenne pepper
- 2/3 cup
- shelled pistachios, coarsely chopped
- 150 mL
Method
- Step 1
- Combine apples, sugar, 1/2 cup (125 mL) water, lemon zest, lemon juice, ginger, salt and cayenne pepper in medium saucepan. Cook over medium heat until apples are softened but still keep their shape, about 20 min. Remove from heat; let stand to cool. Stir in pistachios.
- Step 2
- Ladle chutney into re-sealable containers such as small Mason jars and refrigerate for up to one week.
