Ingredients
- 4 slices
- prosciutto, sliced in half
- 8
- eggs
- 4 tsp
- 18% table cream
- 20 mL
- 1 tsp
- fresh thyme leaves, chopped
- 5 mL
- 1 tsp
- fresh rosemary, chopped
- 5 mL
- 1 tsp
- salt
- 5 mL
- pepper, to taste
- medium chunky salsa (optional)
Method
- Step 1
- Preheat oven to 350 °F (175°C). Line each of 8 greased ramekins with half a slice of prosciutto. Break an egg over the prosciutto and drizzle each egg with 1/2 tsp (2 mL) cream. Top with a portion of the herbs, salt and pepper.
- Step 2
- Transfer ramekins to a baking sheet and bake on the middle rack of oven for approx. 15 min or until white is just set and yolk is still runny.
- Step 3
- Serve with a dollop of salsa, if desired.
