- medium eggplant, each cut lengthwise into 4 or 5 thick slices
- 1/4 tsp
- salt
- 1 mL

- fresh lemon juice
- 20 mL
- 4 tsp
- honey
- 20 mL
- 2 tsp
- olive oil
- 10 mL
- 2 tsp
- fresh thyme leaves, chopped
- 10 mL
Method
- Step 1
- Heat barbecue to medium. Grill eggplant until golden, up to 5 min. per side. Remove from grill to a platter and sprinkle with salt. Drizzle with lemon juice, honey and olive oil. Garnish with thyme, and serve.
