Ingredients

- lemons, zested and juiced
- 2 tbsp
- thinly sliced fresh Compliments Chives

- chopped fresh flat-leaf parsley

- fresh lobsters, steamed and split in half (1 to 1 1/4 lb/500 to 625 g each)

Method
- Step 1
- Preheat grill to high. Meanwhile, combine 1 tsp (5 mL) lemon zest (save the rest for a later use), chives, parsley and capers and chop finely. Set aside.
- Step 2
- Grill lobster halves, flesh side down, for 3 to 5 min. or until just marked. Divide lobster among 8 plates, crack claws and squeeze with lemon juice. Sprinkle with gremolata and drizzle 2 tsp (10 mL) of butter over each. Serve immediately.
