Ingredients
- 1 pkg
- Compliments Light Cream Cheese Spread, at room temperature
- 250 g
- 2 cups
- shredded Irish Cheddar cheese
- 500 mL
- 1/4 cup
- minced red onion
- 60 mL
- 2 tbsp
- chopped fresh parsley
- 30 mL
- 1 tsp
- prepared horseradish
- 5 mL
- 1 pinch
- each salt and pepper
- 1 pkg
- walnut pieces, chopped

Method
- Step 1
- In a large bowl, beat cream cheese with an electric mixer until fluffy. Mix in Cheddar cheese, onion, parsley, horseradish, salt and pepper.
- Step 2
- Lightly dampen hands with cold water; shape cheese mixture into log about 2 inches (5 cm) in diameter.
- Step 3
- Spread walnuts on a plate; roll log in walnuts, gently pressing to adhere. Wrap in plastic wrap and refrigerate for 2 hours, or up to 24 hours.
