- ripe avocado, pitted and peeled

- lemon juice

- finely chopped fresh parsley

Method
- Step 1
- Mix ground turkey with egg, pesto, breadcrumbs and salt. Divide the mixture into 12 portions and shape each into 1/2-in. (1-cm) thick patties. Cover and keep chilled.
- Step 2
- Meanwhile, make herbed guacamole by mashing avocado with lemon juice and pesto until smooth. Stir in parsley. Set aside.
- Step 3
- Grill turkey patties on barbecue preheated to medium-high, 3 to 4 min. per side until cooked through and no longer pink.
- Step 4
- Place turkey patties on half the baguette slices. Top with herbed guacamole, roasted red pepper and remaining baguette slices.
