- beef loin roast, trimmed
- 2 2/3 pounds
- 1 tbsp
- Sensations Extra Virgin 100% Olive Oil
- 3 tbsp
- Compliments Steak Spice
- 33/4 cup
- blue cheese salad dressing, refrigerated
- 1/4 cup
- Lucerne® Half-and-Half
- 1 or 2
- chiles from can of chipotle chiles in adobo sauce
Method
- Step 1
- Prepare a gas or charcoal barbecue for medium-high heat.
- Step 2
- Rub beef all over with olive oil and then steak rub.
- Step 3
- Place meat on grill; close lid.
- Step 4
- Cook turning often, until meat is cooked to your liking (cut to test or use a meat thermometer in center of thickest part), 25-30 minutes and 120° for rare.
- Step 5
- Remove meat from heat and transfer to a platter; cover lightly with foil and let stand 5 minutes.
- Step 6
- While meat cooks, combine salad dressing and half-and-half in a blender or food processor.
- Step 7
- Wearing gloves to protect your hands, cut out and discard chile stem(s) and seeds. (Use 2 chiles if you like your sauce really spicy.)
- Step 8
- Add chile to blender and whirl until sauce is smooth.
- Step 9
- Transfer to a small serving bowl.
- Step 10
- To serve, thinly slice meat across the grain.
- Step 11
- Offer sauce to drizzle over meat to taste.
